Why do we say right at the start of our first tasting dinner that NOTHING IS PERFECT...? The explanation is simple.
We are at the beginning of our long and wonderful journey, which will surely be marked by our mistakes and imperfections. Only in this way do we have the opportunity to learn and do everything we can to ensure a wonderful experience.
We know that it’s the little things that make for perfection, but perfection is no small matter!

Dominik Unčovský & Lukáš Čarný
For our special evenings, the kitchen will be led by Dominik Unčovský, winner of the national round of the Bocuse d'Or and a participant in the European finals.
Dominik’s entire team creates the perfect harmony with trendy modern gastronomy in our open kitchen, while preserving all the traditional elements that our mill and the surrounding countryside represent.
Our recommendation?
Definitely the mushroom soufflé with birch ice cream and blueberries.

Having a hotel without a bar is like playing soccer without a ball. Our lobby bar is the heart of the entire hotel. That’s why so much of what matters often takes place right here.
From the very beginning of our journey, we knew that the cocktails at our bar had to be simple, yet truly exceptional. That’s why partnering with one of the best—Václav Vojíř, the veteran mixologist and owner of Bugsy’s Bar in Prague—was the obvious choice. Under his guidance, Adam Bohuněk created five signature and completely original drinks inspired by chamomile.
In our opinion, he did a fantastic job. The White Negroni, made with mango yogurt, is sure to become the star of your evening.
